Recipe Instructions:

Ingredients:
• 1/2 lb chicken thighs, cut into pieces
• 1/2 cup chopped fresh meloukhia leaves (can substitute spinach or arugula)
• 1/4 cup chopped onion
• 1/4 cup chopped celery
• 1/4 cup diced tomatoes
• 1 garlic clove, minced
• 1/2 teaspoon ground coriander
• 1/2 teaspoon ground cumin
• Salt and pepper to taste
• 1 cup chicken broth or water
• 1 tablespoon olive oil
Instructions:
1. Heat olive oil in a small pot over medium-high heat.
2. Add chicken pieces and brown on all sides.
3. Add chopped onion, celery, and minced garlic. Cook until softened, about 3-4 minutes.
4. Stir in diced tomatoes, ground coriander, ground cumin, salt, and pepper. Cook for another 2 minutes.
5. Add chopped meloukhia leaves and chicken broth (or water). Bring to a boil.
6. Reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally, until chicken is cooked through and flavors meld together.
7. Serve hot as your OMAD meal.
