Ingredients:
• 1 lb of your choice of meat (pork, beef, lamb, chicken), cut into cubes or strips
• Salt and pepper, to taste
• 2-3 cloves garlic, minced
• Juice of 1 lemon
• 2 tablespoons olive oil
• Fresh herbs (optional, such as parsley or oregano), chopped for garnish
Instructions:
• In a bowl, combine the meat with minced garlic, lemon juice, olive oil, salt, and pepper. Mix well to coat the meat evenly. Let it marinate for at least 30 minutes, or ideally up to 2 hours in the refrigerator.
• Preheat a grill or barbecue to medium-high heat. If using wood or charcoal, allow them to burn down to hot embers.
• Thread the marinated meat onto skewers or place directly on the grill grate.
• Grill the meat, turning occasionally, until cooked to your desired doneness and nicely charred on the outside. Cooking times will vary depending on the type and thickness of the meat.
• Ensure chicken is cooked through with no pink inside, and lamb or beef reaches your preferred level of doneness.
• Remove from the grill and let the meat rest for a few minutes.
• Sprinkle with chopped fresh herbs if desired.
• Serve hot with your choice of sides, such as a fresh salad, grilled vegetables, or flatbread.
