Ingredients:
2 chicken breasts (approx. 400-500 grams) or 1 block tofu (approx. 350 grams), cubed (or 2 cups cooked vegetables, approx. 300-350 grams)
1 cup brown rice, cooked (approx. 195 grams)
1 cup black beans, cooked (approx. 170 grams)
1 cup salsa (approx. 240 grams)
1/2 cup shredded cheese (approx. 60 grams)
1/2 cup corn kernels (approx. 75 grams)
1/4 cup chopped cilantro (approx. 15 grams)
1 avocado, sliced (approx. 150 grams)
Lime wedges for serving
Instructions:
1. Cook chicken or tofu in a skillet until browned and cooked through.
