Ingredients:
• 4 whole-wheat tortillas
• 2 cups shredded cheese (cheddar, mozzarella, or a mix)
• 1 cup cooked chicken or beef, shredded (or 1 cup cooked beans)
• 1/2 cup salsa
• 1/4 cup chopped green onions
• 1/4 cup chopped cilantro
• Sour cream and guacamole for serving
Instructions:
1. Heat a large skillet over medium heat. Place a tortilla in the skillet and sprinkle with 1/2 cup shredded cheese.
2. Add cooked chicken, beef, or beans, a spoonful of salsa, green onions, and cilantro.
3. Top with another 1/2 cup shredded cheese and place a second tortilla on top.
4. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted.
5. Remove from skillet, cut into wedges, and serve with sour cream and guacamole.
