500g beef sirloin or tenderloin
1 onion, chopped (about 150g)
1 carrot, chopped (about 100g)
1 celery stalk, chopped (about 50g)
1 clove garlic, minced (about 3g)
1 bay leaf
Salt and pepper to taste
Sauce:
125g sour cream
8g all-purpose flour (about 1 tablespoon)
12g sugar (about 1 tablespoon)
15g white vinegar (about 1 tablespoon)
Bread Dumplings:
Store-bought or homemade bread dumplings (prepare according to package or recipe instructions)
Instructions:
Cook the Beef:
In a large pot, combine 500g beef sirloin or tenderloin with 150g chopped onion, 100g chopped carrot, 50g chopped celery, 3g minced garlic, 1 bay leaf, salt, and pepper.
Add enough water to cover the ingredients (approximately 1 liter). Bring to a boil, then reduce heat to low. Simmer for 1.5-2 hours, until the beef is tender.
Prepare the Sauce:
Remove the beef from the pot and let it rest for 10 minutes.
Strain the cooking liquid and discard the vegetables.
In a bowl, mix 125g sour cream, 8g all-purpose flour, 12g sugar, and 15g white vinegar until smooth.
Return the strained cooking liquid to the pot. Stir in the sour cream mixture and cook over medium heat until the sauce thickens, stirring constantly.
Slice the Beef:
Slice the beef thinly against the grain.
Serve:
Serve the sliced beef with prepared bread dumplings, topped with the creamy vegetable sauce.
