Recipe Instructions:

Ingredients:
• 1kg butternut squash, peeled and cubed
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 liter vegetable stock
• 200ml coconut milk
• 2 tbsp olive oil
• 1 tsp ground cumin
• Salt and black pepper to taste
• Fresh cilantro, chopped (for garnish)
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Toss the butternut squash with 1 tbsp olive oil, salt, and pepper. Roast in the oven for 25-30 minutes until tender.
3. In a large pot, heat the remaining olive oil over medium heat. Add the onion and garlic, and sauté until soft.
4. Add the roasted butternut squash, vegetable stock, and ground cumin. Bring to a boil, then simmer for 10 minutes.
5. Blend the soup until smooth, then stir in the coconut milk. Season with salt and black pepper.
6. Serve hot, garnished with fresh cilantro.
