Recipe Instructions:
Ingredients
1 large sweet potato cut into 1 inch cubes
1 tablespoon olive oil
1 pound ground turkey or chicken 93/7 fat content
1/2 cup onion chopped
1 poblano pepper chopped, seeds and veins removed
1 cup black beans
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon ground pepper
sliced green onion for garnish
Yogurt Hot Sauce
1 cup fat free plain yogurt something smooth like Chobani brand
2 tablespoons Franks Hot Sauce
Instructions
Heat a large skillet to medium high heat. Add 1 tablespoon olive oil and saute the ground turkey and sweet potato cubes. Cook until potatoes are soft and meat is cooked through.
Add chopped onion and pepper. Continue to cook until vegetables are soft.
Reduce heat to medium. Add black beans and spices to the pan. Continue to cook for another couple minutes. Taste for spices. More salt? More cumin?
Sprinkle with chopped tomatoes and green onions and our Greek Yogurt Hot Sauce.
Greek Yogurt Hot Sauce
combine yogurt and hot sauce. Drizzle over skillet.
Serve with fresh green salad for a complete meal!
Notes
If you prefer to not roast the potatoes, simply brown them up with the ground turkey!
