Recipe Instructions:

Ingredients:
• 2 chicken breasts or fish fillets (salmon or cod), cut into chunks
• 1 onion, sliced
• 2 cloves garlic, minced
• 1 teaspoon ground cumin
• 1 teaspoon ground cinnamon
• 1 teaspoon ground ginger
• 1/2 teaspoon ground turmeric
• 1/2 cup dried apricots, chopped
• 1/4 cup raisins
• 1/4 cup almonds, toasted
• 1 cup chicken or vegetable broth
• 2 tablespoons olive oil
• Salt and pepper to taste
• Couscous for serving
Instructions:
1. Heat olive oil in a tagine or large pot over medium heat. Add onion and garlic, and cook until softened.
2. Add ground cumin, cinnamon, ginger, turmeric, salt, and pepper. Cook for 1-2 minutes until fragrant.
3. Add chicken or fish chunks and cook until browned.
4. Add dried apricots, raisins, toasted almonds, and chicken or vegetable broth. Bring to a simmer, cover, and cook for 20-25 minutes.
5. Serve over couscous.
