Ingredients
4 (6-ounce) skin-on salmon fillets
Kosher salt and freshly ground black pepper
4 tbsp. (1/2 stick) unsalted butter, melted, plus more for foil
2 tsp. chopped fresh dill, plus more for garnish
1 tsp. garlic, finely chopped
1 tsp. lemon zest
1 red bell pepper, sliced
1 c. frozen corn, thawed
1 c. frozen lima beans, thawed
Directions
Step 1
Preheat oven to 400°F. Season salmon with salt and pepper. Butter the center of four large sheets of foil and top each with one piece of salmon, skin-side down.
Step 2
Combine butter, dill, garlic, and lemon zest in a bowl. Spoon butter mixture over salmon, dividing evenly. Top with pepper, corn, and lima beans, dividing evenly. Tightly wrap contents in foil and place on a baking sheet. Bake until salmon is just cooked through, 15 to 20 minutes. Garnish with dill.
