Ingredients for Souvlaki with Tzatziki Sauce:
• 500g chicken or pork, cubed
• For the marinade:
• 1/4 cup olive oil
• 1/4 cup lemon juice
• 2 garlic cloves, minced
• 1 tablespoon dried oregano
• Salt and pepper to taste
• Tzatziki Sauce:
• 1 cup Greek yogurt
• 1/2 cucumber, grated and squeezed to remove excess water
• 1 garlic clove, minced
• 1 tablespoon olive oil
• 1 tablespoon lemon juice
• 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
• Salt and pepper to taste
• Skewers, soaked in water if using wooden skewers
Instructions:
Souvlaki:
1. In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
2. Add cubed chicken or pork to the marinade, ensuring all pieces are coated. Marinate in the refrigerator for at least 1 hour, preferably longer.
3. Preheat grill or barbecue to medium-high heat.
4. Thread marinated meat onto skewers.
5. Grill skewers for 10-12 minutes, turning occasionally, until meat is cooked through and has grill marks.
6. Serve hot with pita bread and tzatziki sauce.
Tzatziki Sauce:
1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped fresh dill, salt, and pepper.
2. Mix well and refrigerate for at least 30 minutes before serving to allow flavors to meld.
