Recipe Instructions:

Ingredients:
• 8 oz pasta (linguine, spaghetti, or any preferred pasta)
• 1 cup cherry tomatoes, halved
• 1 small zucchini, sliced
• 1 small yellow squash, sliced
• 1 red bell pepper, sliced
• 2 tablespoons olive oil
• Salt and pepper, to taste
• 1/2 cup pesto sauce (store-bought or homemade)
• Grated Parmesan cheese, for serving
Instructions:
• Preheat oven to 400°F (200°C).
• Toss cherry tomatoes, sliced zucchini, yellow squash, and red bell pepper with olive oil, salt, and pepper on a baking sheet.
• Roast in the preheated oven for 15-20 minutes, or until vegetables are tender and slightly caramelized.
• Cook pasta in a large pot of boiling salted water according to package instructions. Drain and return to the pot.
• Add roasted vegetables and pesto sauce to the cooked pasta. Toss everything together until well coated.
• Transfer to serving plates.
• Serve hot, with grated Parmesan cheese sprinkled on top.
