Ingredients:
100 grams dried lentils
50 grams carrots, diced
50 grams celery, diced
50 grams onion, diced
1 clove garlic, minced
1 tablespoon olive oil
500 ml vegetable broth or water
1 tablespoon tomato paste (optional)
1 teaspoon dried thyme
Salt and pepper to taste
Chopped parsley, for garnish (optional)
Instructions:
Prepare Ingredients:
Rinse the dried lentils under cold water and drain.
Dice the carrots, celery, onion, and mince the garlic.
Cooking Process:
Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, celery, and minced garlic. Sauté for 5-7 minutes until vegetables start to soften.
Add Lentils and Liquid:
Add dried lentils to the pot. Stir to combine with the vegetables.
Pour in vegetable broth or water. If using, stir in tomato paste.
Add dried thyme, salt, and pepper to taste.
Simmer the Stew:
Bring the pot to a boil, then reduce heat to low. Cover and simmer for about 30-40 minutes, or until lentils are tender and the stew has thickened. Stir occasionally.
Finish and Serve:
Taste and adjust seasoning if needed.
Garnish with chopped parsley if desired.
Serve hot as your OMAD meal.
