Ingredients
1/4 c. soy sauce
1/4 c. Mirin (sweet rice cooking wine)
1/2 c. sake
1 tbsp. pure honey
1 tbsp. olive oil
4 (6-ounce) skin-on salmon fillets
Kosher salt and freshly ground black pepper
1 tsp. chopped garlic
1 tsp. chopped ginger
Crispy Roasted Broccoli, for serving, optional
Directions
Step 1
Whisked together soy sauce, mirin, sake, and honey in a bowl until honey is dissolved. Pat salmon fillets dry with paper towels. Season with salt and pepper.
Step 2
Heat oil in a large nonstick skillet over medium-high heat. Cook salmon, skin side down, until skin is crispy, 5 to 7 minutes. Flip and cook 1 minute (salmon will not be cooked all the way through). Transfer salmon to a plate and pour off excess oil.
Step 3
Add teriyaki mixture, garlic, and ginger to skillet. Bring to a boil and cook until reduced by a third, 3 to 4 minutes. Return salmon to skillet, skin side up, and cook until just cooked through, 1 to 2 minutes. Serve with Crispy Roasted Broccoli, if desired, or your favorite side dish.
