Recipe Instructions:

Ingredients:
• 1/2 cup fermented soybean paste (doenjang)
• 4 cups water or vegetable broth
• 1/2 onion, thinly sliced
• 1 small zucchini, sliced
• 1/2 cup cubed tofu
• 1/2 cup kimchi, chopped
• 2-3 garlic cloves, minced
• 1 green onion, chopped (optional)
• 1 tablespoon sesame oil
• Salt and pepper, to taste
Instructions:
• In a large pot, bring water or vegetable broth to a boil. Add sliced onion and cook for 2-3 minutes until slightly softened.
• Stir in fermented soybean paste (doenjang) until dissolved in the broth.
• Add garlic, zucchini, tofu, and kimchi. Reduce heat to medium-low and simmer for about 10-15 minutes, until vegetables are tender and flavors are well combined.
• Stir in sesame oil and adjust seasoning with salt and pepper if needed.
• Garnish with chopped green onions if desired.
• Serve hot as a hearty stew, traditionally accompanied by steamed rice.
