Ingredients:
2 cups cooked potatoes, diced (about 300 grams, leftover boiled or roasted potatoes work well)
1 small onion, thinly sliced (about 70 grams)
4-5 slices of bacon, chopped (about 150 grams)
1-2 eggs per serving (4-8 eggs total)
Salt and pepper to taste
Chopped fresh parsley (optional, for garnish)
Instructions:
1. Cook Bacon and Onions: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon from skillet, leaving the bacon fat in the pan.
2. Saute Onions and Potatoes: Add thinly sliced onions to the skillet with the bacon fat. Cook until onions are softened and slightly caramelized. Add diced potatoes to the skillet, stirring occasionally until potatoes are golden and crispy on the edges.
3. Add Bacon: Return the cooked bacon to the skillet with the potatoes and onions. Stir to combine and heat through.
4. Fry Eggs: In a separate non-stick skillet, fry eggs sunny-side up or as desired.
5. Serve: Divide the Tiroler Gröstl onto plates and top each serving with a fried egg. Season with salt and pepper to taste. Garnish with chopped fresh parsley if desired.
