Ingredients:
For the Tavë Kosi:
500g lamb, cut into cubes
1 cup rice (about 200g)
2 cups plain yogurt (about 480g)
3 eggs
2 tablespoons butter (about 30g)
1 onion, finely chopped
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley or dill for garnish (optional)
Instructions:
Preheat Oven:
Preheat your oven to 180°C (350°F).
Cook Rice:
Cook 1 cup (200g) of rice according to package instructions. Set aside.
Prepare Lamb:
In a skillet, heat 2 tablespoons (30g) of butter over medium heat.
Add 1 finely chopped onion and 2 minced garlic cloves to the skillet. Cook until softened, about 5 minutes.
Add 500g of lamb cubes to the skillet. Cook until browned on all sides. Season with salt and pepper to taste. Remove from heat.
Prepare Yogurt Mixture:
In a bowl, whisk together 2 cups (480g) of plain yogurt and 3 eggs until smooth. Season with salt and pepper.
Assemble Dish:
Grease a baking dish with a little butter or non-stick spray.
Spread the cooked rice evenly on the bottom of the baking dish.
Arrange the browned lamb cubes over the rice.
Pour the yogurt and egg mixture over the lamb and rice.
Bake:
Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the dish is set.
Garnish and Serve:
Garnish with fresh parsley or dill if desired.
Serve hot.
