Recipe Instructions:

Ingredients:
• 400g spaghetti
• 150g pancetta or bacon, diced
• 3 large eggs
• 1 cup grated Parmesan cheese, plus extra for serving
• Salt and black pepper to taste
• Fresh parsley, chopped (optional)
Instructions:
1. Cook spaghetti in boiling salted water according to package instructions until al dente.
2. While spaghetti is cooking, heat a large skillet over medium heat.
3. Add diced pancetta or bacon and cook until crispy.
4. In a bowl, whisk together eggs, grated Parmesan cheese, salt, and black pepper.
5. Drain cooked spaghetti and immediately add to the skillet with the crispy pancetta or bacon (off heat).
6. Quickly toss spaghetti with pancetta or bacon to coat evenly.
7. Pour egg and Parmesan mixture over the hot spaghetti, tossing quickly to combine and coat the pasta evenly with the creamy sauce.
8. Serve immediately, garnished with extra grated Parmesan cheese and chopped parsley if desired.
