Ingredients:
100 grams chicken breast or thighs, diced
1/4 cup peanut butter
1/4 cup diced onion
1/4 cup diced bell pepper (any color)
1/4 cup diced tomato
1 garlic clove, minced
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
1 cup chicken broth or water
1 tablespoon olive oil
Cooked rice, to serve
Instructions:
Cook Chicken:
Heat olive oil in a small pot over medium heat.
Add diced chicken and cook until browned on all sides, about 5 minutes.
Prepare Stew Base:
Add diced onion, bell pepper, and garlic to the pot. Cook until softened, about 3-4 minutes.
Add Spices and Peanut Butter:
Stir in ground cumin, ground coriander, cayenne pepper, salt, and pepper. Cook for 1 minute until fragrant.
Add diced tomato and cook for another 2 minutes.
Add peanut butter to the pot and stir until combined with the vegetables and spices.
Simmer Stew:
Pour in chicken broth or water. Bring to a boil, then reduce heat to low.
Cover and simmer for 20-25 minutes, stirring occasionally, until chicken is cooked through and the stew thickens.
Serve:
Serve hot over cooked rice as your OMAD meal.
