Recipe Instructions:
Ingredients
1 pound ground beef - ground turkey or chicken can be substituted
1 medium yellow onion chopped
1 medium red bell pepper chopped - Hatch Chili , poblano or jalapeno can be substituted for more heat
3 garlic cloves chopped
1 15 ounce can kidney beans drained and rinsed
1 15 ounce can tomato sauce
1 15 ounce can can diced roasted red tomatoes, undrained
2 cups beef stock - or chicken stock if using ground turkey or ground chicken
1/3 cup brown sugar : more if you like it extra sweet
2 tablespoons chili powder
1 tablespoon cumin
1/4 teaspoon cinnamon
1 large sweet potato peeled and cubed
salt and pepper
Instructions
In large soup or stock pot heat one tablespoon olive oil. Add ground beef. Cook until brown and cooked through breaking apart until crumbly. Remove excess oil from pan.
Add onion and pepper to beef. Continue to cook until onion and pepper are tender. Add garlic and cook for another 2 minutes.
Add beans, tomatoes, spices and chicken stock. Bring to a simmer. Taste for salt and pepper.
Add sweet potatoes and continue to simmer until potatoes are tender.
