Ingredients
For the Roast Pork:
450 grams pork shoulder or pork loin
Salt and pepper to taste
1 tablespoon (15 ml) vegetable oil
For the Bread Dumplings (Houskové knedlíky):
4 slices day-old bread (about 120 grams)
240 ml milk
1 egg
Salt to taste
30 grams all-purpose flour
For the Stewed Cabbage (Zelí):
1 small head of cabbage (about 500 grams), shredded
1 onion (about 100 grams), finely chopped
2 tablespoons (30 ml) vegetable oil
1 teaspoon caraway seeds (optional)
Salt and pepper to taste
Instructions:
o Preheat your oven to 350°F (175°C).
o Season the pork shoulder or loin with salt and pepper.
o Heat vegetable oil in a large oven-safe skillet or roasting pan over medium-high heat.
o Sear the pork on all sides until golden brown.
o Transfer the skillet or pan to the oven and roast for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium doneness.
o Remove from oven and let it rest for 10 minutes before slicing.
o Cut the day-old bread into small cubes and place in a large bowl.
o Heat the milk until warm (not boiling) and pour over the bread cubes. Let it soak for about 10 minutes.
o Add the egg, salt, and flour to the soaked bread cubes. Mix well until you get a dough-like consistency.
o Shape the mixture into small oval dumplings, about the size of a small potato.
o Bring a large pot of salted water to a boil. Carefully add the dumplings and cook for about 15-20 minutes, or until they float to the surface.
o Heat vegetable oil in a large skillet over medium heat.
o Add finely chopped onion and cook until translucent.
o Stir in shredded cabbage and caraway seeds (if using). Season with salt and pepper.
o Cook, stirring occasionally, until the cabbage is tender and slightly caramelized, about 15-20 minutes.
o Slice the roasted pork and serve with bread dumplings and stewed cabbage on the side.
