Recipe Instructions:

Ingredients:
• 1 lb boneless, skinless chicken breasts, thinly sliced
• Salt and pepper to taste
• 2 tablespoons vegetable oil
• 2 cups mixed vegetables (bell peppers, broccoli, carrots, snow peas)
• 1/4 cup soy sauce
• 2 tablespoons honey or brown sugar
• 2 cups cooked brown rice

Instructions:
1. Season chicken slices with salt and pepper.
2. Heat vegetable oil in a large skillet or wok over medium-high heat.
3. Stir-fry chicken until browned and cooked through, about 5-7 minutes.
4. Add mixed vegetables to the skillet and stir-fry for another 3-4 minutes until tender-crisp.
5. In a small bowl, mix soy sauce and honey (or brown sugar).
6. Pour soy sauce mixture over chicken and vegetables. Stir to coat evenly.
7. Serve chicken stir-fry hot over cooked brown rice.
