Ingredients:
1.5 kg 4% Greek yogurt
0.5 kg Whole grain oats
0.08 kg Raisins
0.05 kg Dried apricots, chopped
0.06 kg Dried cranberries
0.08 kg Shelled sunflower seeds
0.06 kg Sliced almonds
0.04 kg Sliced hazelnuts
0.015 kg Powdered sugar (optional, adjust to taste)
0.06 kg Butter fat (e.g., Debic)
0.04 kg Dried bananas, sliced
0.06 kg Dried plums (prunes), chopped
Instructions:
Prepare the Yogurt Mixture:
In a large bowl, combine the Greek yogurt with powdered sugar (if using). Mix well until smooth and creamy.
Prepare the Crunchy Topping:
In a skillet, melt the butter fat over medium heat.
Add the whole grain oats and toast them until they turn golden brown and fragrant, stirring occasionally.
Remove the toasted oats from the skillet and let them cool completely.
Assemble the Parfaits:
In serving glasses or bowls, layer the ingredients in the following order:
A spoonful of the Greek yogurt mixture at the bottom.
Sprinkle a layer of toasted whole grain oats on top of the yogurt.
Add a variety of dried fruits and nuts on top of the oats layer, such as raisins, chopped dried apricots, dried cranberries, shelled sunflower seeds, sliced almonds, sliced hazelnuts, dried bananas, and chopped dried plums (prunes).
Repeat the layers until the glasses or bowls are filled, ending with a final layer of dried fruits and nuts on top.
