Ingredients:
• 12 lasagna noodles, cooked according to package instructions
• 500g ricotta cheese
• 200g fresh spinach, chopped
• 2 cups shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• 2 eggs
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• Salt and pepper to taste
• 4 cups marinara sauce (store-bought or homemade)
Instructions:
1. Preheat oven to 180°C (350°F). Grease a 9x13-inch baking dish.
2. In a bowl, mix together ricotta cheese, chopped fresh spinach, 1 cup shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, eggs, dried oregano, dried basil, salt, and pepper until well combined.
3. Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
4. Layer cooked lasagna noodles over the sauce.
5. Spread half of the spinach and ricotta mixture evenly over the noodles.
6. Repeat with another layer of marinara sauce, noodles, and the remaining spinach and ricotta mixture.
7. Top with remaining marinara sauce, shredded mozzarella cheese, and grated Parmesan cheese.
8. Cover with foil and bake in the preheated oven for 30 minutes.
9. Remove foil and bake for an additional 10-15 minutes, until cheese is melted and bubbly.
10. Let lasagna cool for a few minutes before slicing and serving.
