Recipe Instructions:
Ingredients:
300 grams oxtail pieces
1 onion, chopped
2 carrots, sliced
2 cloves garlic, minced
1 tablespoon tomato paste
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Salt and pepper to taste
1 cup beef broth or water
1 tablespoon olive oil
Instructions:
Prepare Oxtail:
Rinse the oxtail pieces under cold water and pat dry with paper towels.
Sauté Vegetables:
Heat olive oil in a pot over medium heat.
Add chopped onion and garlic. Sauté until softened, about 3-4 minutes.
Add Oxtail and Spices:
Push the onions and garlic to the side of the pot and add the oxtail pieces. Brown on all sides, about 5-7 minutes.
Stew Assembly:
Stir in tomato paste, ground coriander, and ground cumin. Cook for 1-2 minutes until fragrant.
Simmer:
Pour in beef broth or water. Bring to a boil, then reduce heat to low. Cover and simmer for 2 to 2.5 hours, or until oxtail is tender and falls off the bone. Stir occasionally and add more liquid if needed.
Season and Serve:
Season with salt and pepper to taste.
Serve hot as your OMAD meal, preferably with rice or bread for soaking up the flavorful broth.
