Main Dish

Recipe Instructions:

Ingredients:
• 200g flat rice noodles
• 150g prawns, peeled and deveined
• 100g cockles (optional)
• 2 eggs, lightly beaten
• 1 cup bean sprouts
• 2 tablespoons soy sauce
• 1 tablespoon dark soy sauce
• 2 cloves garlic, minced
• 2 tablespoons vegetable oil
• 2 green onions, chopped
• 1 teaspoon chili paste (optional)
Instructions:
1. Heat oil in a large wok over medium-high heat. Add minced garlic and stir-fry until fragrant.
2. Add prawns and cook until they turn pink.
3. Push the prawns to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until they are almost set.
4. Add the rice noodles, soy sauce, and dark soy sauce. Stir-fry until the noodles are evenly coated with the sauce.
5. Add bean sprouts and green onions, and stir-fry for another 2-3 minutes.
6. If using, add the cockles and chili paste, and stir-fry for an additional minute.
7. Serve hot.
