Recipe Instructions:

Ingredients:
300 grams mixed vegetables (potatoes, spinach, green beans, or lentils)
1 onion, chopped
28 grams butter or oil (2 tablespoons)
15 grams all-purpose flour (2 tablespoons)
480 ml vegetable broth or water (2 cups)
Salt and pepper to taste
Sour cream (optional, for serving)
Instructions:
o Peel and dice potatoes (if using), chop spinach and green beans, or rinse lentils.
o In a large pot, heat butter or oil over medium heat. Add chopped onion and sauté until translucent.
o Add mixed vegetables and cook for 5-7 minutes, stirring occasionally.
o Sprinkle flour over vegetables and stir to coat evenly. Cook for 1-2 minutes.
o Gradually add vegetable broth or water, stirring constantly to avoid lumps.
o Bring to a boil, then reduce heat to low. Simmer uncovered for 15-20 minutes until vegetables are tender and stew thickens.
o Season with salt and pepper to taste.
o Serve hot, optionally garnished with a dollop of sour cream.
