Ingredients:
360 grams all-purpose flour (about 3 cups)
6 grams salt (1 teaspoon)
12 grams sugar (1 tablespoon)
7 grams instant yeast (1 packet or 2 1/4 teaspoons)
300 milliliters warm water (1 1/4 cups)
30 grams olive oil (2 tablespoons)
Instructions:
In a large bowl, combine flour, salt, sugar, and yeast. Mix well.
Add warm water and olive oil to the dry ingredients. Stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Preheat your oven to 245°C (475°F) and place a baking sheet or pizza stone in the oven to heat.
Punch down the dough and divide it into 8 equal portions. Roll each portion into a ball and then flatten into a 6 mm thick circle.
Place the circles on the hot baking sheet or stone and bake for 5-7 minutes, or until puffed and lightly browned.
Remove from the oven and cool on a wire rack. Pita bread is ready to serve!
