Recipe Instructions:

Ingredients:
• 300g udon noodles
• 4 cups dashi broth (or vegetable broth for vegetarian/vegan option)
• 2 tablespoons soy sauce
• 1 tablespoon mirin (optional)
• 1 tablespoon sake (optional)
• 1/2 cup sliced green onions
• 200g firm tofu, diced (optional)
• Nori seaweed, thinly sliced (optional)
• Kamaboko (fish cake), sliced (optional)
Instructions:
1. Cook udon noodles according to package instructions. Drain and set aside.
2. In a large pot, bring dashi broth to a boil. Reduce heat to medium.
3. Add soy sauce, mirin, and sake (if using) to the broth. Stir to combine.
4. Add sliced green onions and diced tofu (if using) to the broth.
5. Divide cooked udon noodles among serving bowls.
6. Ladle hot broth over the noodles, ensuring each bowl gets an equal amount of broth and toppings.
7. Garnish with thinly sliced nori seaweed and sliced kamaboko if desired.
8. Serve hot.
