Ingredients:
450 grams carrots, peeled and sliced into rounds or sticks
30 ml olive oil (2 tablespoons)
3 grams ground cumin (1 teaspoon)
1.5 grams ground cinnamon (1/2 teaspoon)
1.5 grams ground coriander (1/2 teaspoon)
0.5 grams ground ginger (1/4 teaspoon)
Salt and pepper to taste
30 grams honey (2 tablespoons)
35 grams dried fruits (such as raisins, chopped apricots, or dates) (1/4 cup)
Chopped fresh parsley or cilantro for garnish (optional)
Instructions:
Heat olive oil in a large skillet or sauté pan over medium heat. Add sliced carrots and sauté for 3-4 minutes until slightly softened.
Sprinkle ground cumin, cinnamon, coriander, and ginger over the carrots. Season with salt and pepper to taste. Stir well to coat the carrots evenly with spices.
Continue to cook the carrots for 5-7 minutes, stirring occasionally, until they are tender-crisp.
Drizzle honey over the carrots and add dried fruits (raisins, apricots, or dates). Stir to combine and cook for another 2-3 minutes until carrots are caramelized and glazed.
Transfer the spiced carrots to a serving dish. Garnish with chopped parsley or cilantro if desired.
Serve hot as a flavorful side dish.
