Ingredients:
• 1 package Cajun Fifteen Bean Soup Mix (available in stores)
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 bell pepper, chopped
• 2 celery stalks, chopped
• 1 can diced tomatoes (14 oz)
• 1 smoked sausage or ham hock, sliced (optional for additional flavor)
• 8 cups chicken or vegetable broth
• Cajun seasoning (to taste)
• Salt and pepper (to taste)
• Cooked rice, for serving
Instructions:
1. Prepare the Beans:
• Rinse the Cajun Fifteen Bean Soup Mix under cold water and drain.
2. Sauté the Vegetables:
• In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, bell pepper, and celery. Sauté until softened, about 5-7 minutes.
3. Add Beans and Liquid:
• Add the rinsed beans, diced tomatoes, smoked sausage or ham hock (if using), and chicken or vegetable broth to the pot. Stir well to combine.
4. Simmer the Soup:
• Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally.
5. Season and Serve:
• Season the soup with Cajun seasoning, salt, and pepper to taste. Adjust seasoning as needed.
6. Serve:
• Serve the Cajun Fifteen Bean Soup hot over cooked rice. Optionally, garnish with chopped green onions or parsley.
