Frijoles Charros
Ingredients:
• 250g pinto beans, cooked and drained (or canned)
• 100g chorizo, sliced
• 1 onion, chopped
• 1-2 jalapeño peppers, seeded and chopped
• 2 cloves garlic, minced
• 1 tomato, chopped
• 1 tsp cumin powder
• Salt and pepper to taste
• Fresh cilantro, chopped (optional)
• Olive oil
Instructions:
1. If using dried beans, cook them according to package instructions until tender. Drain and set aside.
2. In a large skillet or pot, heat a tablespoon of olive oil over medium heat. Add the sliced chorizo and cook until it starts to brown and release its oils.
3. Add the chopped onion, jalapeño peppers, and minced garlic to the skillet. Cook until softened.
4. Stir in the chopped tomato and cook until it begins to break down.
5. Add the cooked beans to the skillet along with cumin powder, salt, and pepper. Stir well to combine.
6. Allow the mixture to simmer for about 10-15 minutes, stirring occasionally, until the flavors meld together.
7. Adjust seasoning if needed and sprinkle with chopped cilantro before serving.
8. Serve hot as a hearty stew or as a side dish with rice and tortillas.
