Recipe Instructions:

Ingredients:
• 2 cups white rice, rinsed
• 4 chicken thighs or breasts, bone-in
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1 red bell pepper, diced
• 1 cup frozen peas
• 2 cups chicken broth
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• Salt and pepper to taste
• Fresh cilantro, chopped (for garnish)
Instructions:
1. In a large skillet or Dutch oven, brown chicken pieces on both sides. Remove and set aside.
2. In the same skillet, sauté onions and garlic until softened. Add bell pepper, cook for 2 minutes.
3. Stir in rice, cumin, and paprika until rice is coated and lightly toasted.
4. Return chicken pieces to the skillet. Add chicken broth, peas, salt, and pepper.
5. Bring to a boil, then reduce heat to low. Cover and simmer until rice is cooked and chicken is tender, about 20-25 minutes.
6. Garnish with chopped cilantro before serving.
