Ingredients:
For the Fish Dish:
4 fish fillets (such as cod or tilapia)
2 tomatoes, diced (about 250g)
1 onion, thinly sliced
2 cloves garlic, minced
1/4 cup chopped fresh parsley (about 15g)
1/4 cup chopped fresh dill (about 15g)
Salt and pepper to taste
Olive oil for cooking (about 2 tablespoons or 30ml)
Instructions:
Preheat Oven:
Preheat your oven to 180°C (350°F).
Prepare Fish:
Season 4 fish fillets with salt and pepper on both sides.
Cook Vegetables:
Heat about 2 tablespoons (30ml) of olive oil in a skillet over medium heat.
Add 1 thinly sliced onion and 2 minced garlic cloves. Cook until softened, about 5 minutes.
Add 2 diced tomatoes (about 250g) to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down slightly and form a sauce.
Stir in 1/4 cup (15g) chopped fresh parsley and 1/4 cup (15g) chopped fresh dill. Season with salt and pepper.
Assemble Dish:
Grease a baking dish with a little olive oil.
Arrange the seasoned fish fillets in the baking dish.
Pour the tomato and herb mixture over the fish fillets.
Bake:
Cover the baking dish with foil.
Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
Serve:
Serve hot, garnished with additional fresh herbs if desired.
