291. Roasted Chicken
Ingredients:
• 1 whole chicken (about 4-5 lbs)
• 2 tablespoons olive oil
• Salt and pepper, to taste
• 1 lemon, halved
• 4 garlic cloves, minced
• Fresh herbs (such as rosemary, thyme, or sage), chopped
• Mashed potatoes, gravy, and steamed vegetables, for serving
Instructions:
o Preheat your oven to 375°F (190°C).
o Rinse the chicken under cold water and pat dry with paper towels. Place the chicken in a roasting pan or baking dish.
o Rub the chicken all over with olive oil. Season generously inside and out with salt and pepper.
o Squeeze lemon halves over the chicken and place them inside the cavity. Sprinkle minced garlic and chopped fresh herbs over the chicken.
o Roast the chicken in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh without touching bone.
o Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
o Serve roasted chicken hot with mashed potatoes, gravy, and steamed vegetables.
