Ingredients:
• 1 lb boneless, skinless chicken thighs or breasts, cut into cubes
• 1 cup plain yogurt
• 2 tablespoons vegetable oil
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 1 tablespoon grated ginger
• 1 tablespoon garam masala
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric
• 1/4 teaspoon cayenne pepper (adjust to taste)
• 1 (15 oz) can tomato sauce
• 1 cup heavy cream
• Salt and pepper to taste
• Fresh cilantro, chopped, for garnish
Instructions:
1. In a bowl, combine chicken cubes and yogurt. Marinate for at least 30 minutes.
2. Heat vegetable oil in a large skillet over medium-high heat.
3. Add chopped onion and sauté until softened.
4. Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant.
5. Add garam masala, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for another minute.
6. Add marinated chicken (along with yogurt) to the skillet. Cook until chicken is browned.
7. Stir in tomato sauce and heavy cream. Bring to a simmer.
8. Reduce heat to low and simmer, uncovered, for 20-25 minutes until chicken is cooked through and sauce has thickened.
9. Season with salt and pepper to taste.
10. Serve Chicken Tikka Masala hot over rice, garnished with fresh cilantro.
