Feijoada (Brazil)
Ingredients:
• 250g black beans
• 200g pork shoulder or pork belly, diced
• 100g smoked sausage (linguiça), sliced
• 100g bacon, diced
• 1 onion, chopped
• 3 cloves garlic, minced
• 1 bay leaf
• 1 orange, sliced (optional)
• Salt and pepper to taste
• Olive oil
• Water
Instructions:
1. Rinse the black beans under cold water and soak them in plenty of water overnight.
2. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced pork shoulder (or belly), sausage, and bacon. Cook until browned.
3. Add the chopped onion and minced garlic to the pot. Cook until softened.
4. Drain the soaked beans and add them to the pot. Stir to combine with the other ingredients.
5. Add enough water to cover the beans by about an inch. Stir in the bay leaf.
6. Bring the pot to a boil, then reduce the heat to low and simmer gently for about 2-3 hours or until the beans are tender, stirring occasionally.
7. Halfway through cooking, add the orange slices if using.
8. Season with salt and pepper to taste. Remove the bay leaf before serving.
9. Serve hot, traditionally accompanied by rice, collard greens, and orange slices.
