Ingredients :
1 lb (450 grams) ground turkey
1 tablespoon olive oil (15 ml)
2 cloves garlic, minced (6 grams)
1 teaspoon ginger, minced (2 grams)
1 bell pepper, thinly sliced (120 grams)
1 carrot, julienned or grated (100 grams)
1/4 cup peanuts, chopped (optional, for garnish, 30 grams)
Salt and pepper to taste
Butter lettuce leaves or any lettuce of your choice
For Peanut Sauce:
1/4 cup creamy peanut butter (60 grams)
2 tablespoons soy sauce (30 ml)
1 tablespoon honey or maple syrup (15 ml)
1 tablespoon rice vinegar (15 ml)
1 teaspoon sesame oil (5 ml)
Water, as needed to thin out the sauce
Instructions:
1. Prepare Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, honey or maple syrup, rice vinegar, and sesame oil until smooth. Add water gradually to achieve desired consistency. Set aside.
2. Cook Turkey and Vegetables: In a large skillet, heat olive oil over medium-high heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant. Add ground turkey, breaking it up with a spoon, and cook until browned and cooked through.
3. Add Vegetables: Stir in bell pepper and carrot, cook for 2-3 minutes until vegetables are tender-crisp. Season with salt and pepper to taste.
4. Assemble Wraps: Spoon the turkey and vegetable mixture onto lettuce leaves. Drizzle with peanut sauce and sprinkle with chopped peanuts if desired.
5. Serve: Roll up the lettuce leaves and enjoy immediately.
