Ingredients:
2 turkey scallopini (thinly sliced turkey cutlets): Approximately 400 grams
Salt and pepper to taste
1/4 cup all-purpose flour: 30 grams
2 tablespoons butter: 28 grams
1/4 cup chicken broth: 60 grams
1/4 cup dry white wine: 60 grams
1 lemon, juiced: Approximately 30 grams
2 tablespoons capers, drained: Approximately 28 grams
Fresh parsley for garnish
Instructions:
Prepare the Turkey Scallopini:
Season the turkey scallopini with salt and pepper on both sides.
Dredge the Scallopini:
Place the all-purpose flour in a shallow dish.
Dredge each turkey scallopini in the flour, shaking off any excess.
Cook the Scallopini:
Heat butter in a skillet over medium-high heat.
Cook the turkey scallopini for 2-3 minutes per side, or until they are golden brown and cooked through.
Remove the scallopini from the skillet and set aside.
Prepare the Sauce:
In the same skillet, add chicken broth, dry white wine, lemon juice, and drained capers.
Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
Finish and Serve:
Return the cooked turkey scallopini to the skillet.
Simmer for another minute to heat through and allow the flavors to meld.
Serve hot as your OMAD meal, garnished with fresh parsley.
