Recipe Instructions:

Ingredients
1 cup coconut or other plant based milk
1/4 tsp vanilla
1 tsp agave syrup or maple syrup
1/4 cup chia seeds
1/4 cup fresh or frozen raspberries*
1 apricot*, diced
1 spear pinapple, diced
1 kiwi, peeled and diced
1/4 cup fresh blackberries*
Shaved coconut to taste
Directions
STEP 1
Combine milk, vanilla, agave and chia is a glass bowl or measuring cup. Refrigerate at least four hours (up to 24 hours), stirring at least once during that time. If I am making this for breakfast, I will usually mix this up and put it in the fridge after dinner and stir it once right before bed and let it sit in the fridge overnight.
STEP 2
Layer pudding and chopped fruit in a stemless wine glass as follows:
layer 1: 1/3 chia pudding
layer 2: raspberries
layer 3: apricot
layer 3: 1/3 chia pudding
layer 4: pineapple
layer 5: kiwi
layer 6: remaining chia pudding
layer 7: blackberries
STEP 3
Top with shredded coconut if desired.
