Ingredients:
200g soba noodles
4 cups water
1 tablespoon sesame oil (optional)
2 tablespoons soy sauce
1 tablespoon mirin (sweet rice wine)
1 tablespoon rice vinegar
1 teaspoon sugar
1 teaspoon grated ginger
1 green onion, finely sliced
Sesame seeds for garnish
Nori (seaweed), cut into thin strips for garnish
Instructions:
Cook the Soba Noodles:
Bring a large pot of water to a boil.
Add the soba noodles and cook according to the package instructions, usually 4-5 minutes.
Drain the noodles and rinse them under cold water to stop the cooking process and remove excess starch.
Prepare the Sauce:
In a small bowl, mix together the soy sauce, mirin, rice vinegar, sugar, and grated ginger until the sugar is dissolved.
Combine Noodles and Sauce:
Place the cooked and cooled soba noodles in a large mixing bowl.
Pour the sauce over the noodles and toss to coat evenly.
If using, add the sesame oil and mix well.
Serve:
Divide the noodles into serving bowls.
Garnish with sliced green onions, sesame seeds, and nori strips.
Tips:
Add protein: You can add tofu, chicken, or shrimp for a more substantial meal.
Vegetables: Include julienned vegetables like carrots, cucumbers, or bell peppers for added crunch and nutrition.
