Ingredients:
• 1 package (400g) frozen spinach, thawed and drained
• 200g feta cheese, crumbled
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1/2 cup chopped fresh dill
• 1/2 cup chopped fresh parsley
• 1/4 cup grated Parmesan cheese
• 4 eggs, beaten
• Salt and pepper to taste
• 1 package (400g) filo pastry sheets, thawed if frozen
• 1/2 cup melted butter
• Mixed greens for salad
• Balsamic vinaigrette or dressing of choice
Instructions:
1. Preheat oven to 180°C (350°F). Grease a baking dish.
2. In a large bowl, mix together thawed and drained spinach, crumbled feta cheese, chopped onion, minced garlic, chopped dill, chopped parsley, grated Parmesan cheese, beaten eggs, salt, and pepper.
3. Layer half of the filo pastry sheets in the greased baking dish, brushing each sheet with melted butter.
4. Spread spinach and feta mixture evenly over the filo pastry sheets.
5. Layer remaining filo pastry sheets on top, brushing each sheet with melted butter.
6. Bake in the preheated oven for 45-50 minutes, until golden and crispy.
7. While the pie is baking, prepare a side salad with mixed greens and dress with balsamic vinaigrette or dressing of choice.
8. Remove spinach and feta pie from oven and let cool for a few minutes before slicing.
9. Serve warm slices of spinach and feta pie with a side salad.
