Ingredients:
• 250g dried white beans (such as faba or cannellini beans)
• 100g Spanish chorizo, sliced
• 100g morcilla (Spanish blood sausage), sliced (optional)
• 100g pancetta or bacon, diced
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 bay leaf
• 1 tsp sweet paprika
• Salt and pepper to taste
• Olive oil
• Water
Instructions:
1. Rinse the dried beans under cold water and soak them in plenty of water overnight.
2. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chorizo, morcilla (if using), and pancetta. Cook until they release their oils and begin to brown slightly.
3. Add the chopped onion and minced garlic to the pot. Cook until softened.
4. Drain the soaked beans and add them to the pot. Stir to combine with the other ingredients.
5. Add enough water to cover the beans by about an inch. Stir in the bay leaf and paprika.
6. Bring the pot to a boil, then reduce the heat to low and simmer gently for about 2 hours or until the beans are tender, stirring occasionally.
7. Season with salt and pepper to taste. Remove the bay leaf before serving.
8. Serve hot, optionally drizzling with a little extra olive oil.
