For the Salisbury Steaks:
• 1 lb ground beef (preferably lean)
• 1/2 cup breadcrumbs
• 1/4 cup finely chopped onion
• 1 tablespoon Worcestershire sauce
• 1 teaspoon Dijon mustard
• 1 egg
• Salt and pepper, to taste
• 2 tablespoons olive oil, for cooking
For the Mushroom Gravy:
• 1 tablespoon olive oil
• 8 oz mushrooms, sliced (cremini or button mushrooms)
• 1/2 onion, thinly sliced
• 2 cloves garlic, minced
• 2 cups beef broth
• 1 tablespoon Worcestershire sauce
• 1 tablespoon tomato paste
• 1 tablespoon cornstarch (optional, for thickening)
• Salt and pepper, to taste
• Chopped fresh parsley, for garnish (optional)
Instructions:
1. In a large bowl, combine ground beef, breadcrumbs, chopped onion, Worcestershire sauce, Dijon mustard, egg, salt, and pepper. Mix until well combined.
2. Divide the mixture into 4-6 equal portions and shape them into oval or round patties.
3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
4. Add the patties to the skillet and cook for about 4-5 minutes on each side, or until they are browned and cooked through. Remove the patties from the skillet and set aside.
5. In the same skillet, add another tablespoon of olive oil if needed. Add sliced mushrooms and cook for about 5-6 minutes, until they are browned and tender.
6. Add thinly sliced onion and minced garlic to the skillet. Cook for another 2-3 minutes until the onions are softened.
• Stir in beef broth, Worcestershire sauce, and tomato paste. Bring the mixture to a simmer.
• In a small bowl, mix cornstarch with 1-2 tablespoons of water until smooth (if using). Gradually add the cornstarch mixture to the skillet, stirring constantly, until the gravy thickens slightly.
• Season with salt and pepper to taste.
• Return the cooked Salisbury steaks to the skillet with the mushroom gravy. Spoon some of the gravy over the steaks.
• Simmer the steaks in the gravy for another 5-7 minutes, allowing the flavors to meld together.
• Serve Salisbury steaks hot, topped with mushroom gravy.
• Garnish with chopped fresh parsley if desired.
• Serve with mashed potatoes, rice, or noodles, and your choice of vegetables.
