Ingredients:
For the Soup:
• 500 grams mutton or beef, cut into bite-sized pieces
• 1 liter beef broth (or water with beef bouillon)
• 2 large potatoes, peeled and diced
• 2 carrots, peeled and sliced
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 teaspoon salt (or to taste)
• 1/2 teaspoon black pepper
• 1 tablespoon oil
For the Noodles:
• 200 grams all-purpose flour
• 1/2 teaspoon salt
• Water (enough to form a dough)
Instructions:
1. Prepare the Noodles:
In a large bowl, mix the flour and salt. Gradually add water while mixing until a firm dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Roll out the dough into a thin sheet, about 1-2 mm thick. Cut into small squares or strips (about 2 cm x 2 cm).
2. Cook the Meat:
In a large pot, heat the oil over medium heat. Add the mutton or beef pieces and cook until browned on all sides.
Add the chopped onion and minced garlic and cook until the onion is translucent.
3. Prepare the Soup:
Add the beef broth to the pot and bring to a boil. Reduce to a simmer and cook for about 30 minutes or until the meat is tender.
Add the diced potatoes and sliced carrots to the pot. Continue to simmer until the vegetables are tender, about 15-20 minutes.
4. Add the Noodles:
Carefully add the homemade noodles to the pot. Cook for an additional 5-10 minutes until the noodles are cooked through.
5. Season and Serve:
Season the soup with salt and black pepper to taste.
Serve hot, garnished with chopped green onions or fresh herbs if desired.
Reheating Instructions:
• Stovetop: Reheat gently over medium heat until warmed through, adding a bit of water or broth if needed to adjust the consistency.
• Microwave: Heat on medium power in 1-minute increments, stirring in between, until heated through.
