For the meatballs:
1 pound ground beef (you can also use a mix of ground beef and ground pork)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1 egg
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
Salt and pepper to taste
For assembling the subs:
Sub rolls or baguette, sliced lengthwise
Marinara sauce
Sliced mozzarella cheese
Chopped fresh parsley or basil (for garnish)
Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, milk, egg, dried oregano, dried basil, garlic powder, salt, and pepper. Mix the ingredients until well combined.
Shape the mixture into meatballs of your desired size. You can make them smaller for more bite-sized subs or larger for a heartier option.
Place the meatballs on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until the meatballs are cooked through and browned.
While the meatballs are baking, warm the marinara sauce in a saucepan over medium heat.
Once the meatballs are done, place them in the warm marinara sauce and let them simmer for a few minutes to absorb the flavors.
Assemble the meatball subs: Open the sub rolls or baguette and lay slices of mozzarella cheese on the bottom. Place some of the cooked meatballs on top of the cheese.
Spoon some additional marinara sauce over the meatballs.
Top with more slices of mozzarella cheese.
Place the subs in the oven under the broiler for a few minutes, until the cheese is melted and bubbly.
Remove the subs from the oven and sprinkle chopped fresh parsley or basil on top for added flavor and garnish.
Serve the Meatball Subs hot and enjoy!
You can also add extra toppings like sautéed bell peppers and onions for more flavor and texture. Serve these subs with a side of potato chips or a simple salad for a satisfying meal.
