0.5 kg Cottage cheese (semi-fat)
0.3 kg Cream cheese (such as Philadelphia)
0.7 kg Frozen strawberries
0.9 kg Frozen pears
0.2 kg Date syrup (or substitute honey or maple syrup)
0.02 kg Salt
0.001 kg Ground white pepper
Instructions:
Prepare the Cheesecake Base:
In a food processor, blend together the cottage cheese, cream cheese, and date syrup until smooth and creamy. Adjust sweetness to taste.
Prepare the Fruit Puree:
Thaw the frozen strawberries and pears, then puree each separately in a blender or food processor until smooth.
Assemble the Cheesecake Layers:
Spread half of the cheese mixture onto the bottom of a springform pan, smoothing it out evenly.
Pour the strawberry puree over the cheese layer, spreading it evenly.
Carefully spread the remaining cheese mixture over the strawberry layer.
Finally, pour the pear puree over the cheese layer, spreading it evenly.
Chill the Cheesecake:
Cover the springform pan with plastic wrap and place it in the refrigerator to chill for at least 4 hours, or until set.
Serve:
Once set, remove the cheesecake from the refrigerator and carefully release it from the springform pan.
Slice and serve chilled.
