Ingredients:
• 200g ground beef
• 200g ground pork
• 50g breadcrumbs
• 1 egg
• 2 tbsp grated Parmesan cheese
• 1 tbsp fresh parsley, chopped
• 1/2 tsp salt
• 1/4 tsp black pepper
• 2 tbsp olive oil
• 1 onion, chopped
• 2 cloves garlic, minced
• 1.5 liters chicken stock
• 100g small pasta (such as acini di pepe or orzo)
• 100g spinach, chopped
• Salt and black pepper to taste
• Fresh Parmesan cheese, grated (for garnish)
Instructions:
1. Prepare the Meatballs:
1. In a bowl, combine the ground beef, ground pork, breadcrumbs, egg, grated Parmesan cheese, chopped parsley, salt, and black pepper.
2. Mix well until all ingredients are thoroughly combined.
3. Shape the mixture into small meatballs, about 2 cm in diameter.
2. Cook the Meatballs:
1. Heat the olive oil in a large pot over medium heat.
2. Add the meatballs in batches and cook until browned on all sides. Remove the meatballs and set aside.
3. Make the Soup:
1. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
2. Pour in the chicken stock and bring to a boil.
3. Add the small pasta and cook according to the package instructions until al dente.
4. Add the browned meatballs back into the pot.
4. Add Spinach:
1. Stir in the chopped spinach and cook for another 2-3 minutes, until the spinach is wilted.
5. Season and Serve:
1. Season the soup with salt and black pepper to taste.
2. Serve hot, garnished with freshly grated Parmesan cheese.
