Recipe Instructions:

Ingredients:
• 4 fish fillets (such as tilapia, cod, or salmon)
• Salt and pepper to taste
• 2 tablespoons olive oil
• 1 lemon, thinly sliced
• Fresh herbs (such as thyme, rosemary, or dill)
• 2 cups mixed vegetables (broccoli, carrots, cauliflower)
• Optional: Garlic cloves, minced
Instructions:
1. Preheat oven to 200°C (400°F).
2. Season fish fillets with salt and pepper, then place them in a baking dish.
3. Drizzle olive oil over the fish. Arrange lemon slices and fresh herbs on top.
4. In a separate baking dish, toss mixed vegetables with olive oil, salt, pepper, and minced garlic (if using).
5. Bake fish and vegetables for 15-20 minutes or until fish flakes easily with a fork and vegetables are tender.
6. Serve fish with roasted vegetables on the side.
