Recipe Instructions:

Ingredients:
• 1 lb chicken thighs, cut into bite-sized pieces
• 1 can (14 oz) coconut milk
• 2-3 tbsp green curry paste
• 1 cup chicken broth
• 1 cup mixed vegetables (such as bell peppers, bamboo shoots, and Thai eggplant)
• 1 tbsp fish sauce
• 1 tbsp brown sugar
• Fresh basil leaves for garnish
• Cooked rice for serving
Instructions:
1. In a large skillet or pot, heat coconut milk over medium heat until simmering.
2. Stir in green curry paste and cook for 1-2 minutes until fragrant.
3. Add chicken pieces and cook until browned.
4. Pour in chicken broth and bring to a boil.
5. Add mixed vegetables, fish sauce, and brown sugar.
6. Reduce heat to low, cover, and simmer for 15-20 minutes until chicken is cooked through and vegetables are tender.
7. Serve hot over cooked rice, garnished with fresh basil leaves.
