Ingredients:
500g ground beef or lamb
1 onion (approximately 150g), finely chopped
2 cloves garlic (approximately 6g), minced
2 tomatoes (approximately 250g), diced
1 red bell pepper (approximately 150g), diced
1 teaspoon ground cumin (approximately 3g)
1 teaspoon paprika (approximately 3g)
1/2 teaspoon ground cinnamon (approximately 1g)
Salt and pepper to taste
4 eggs (approximately 200g)
Fresh cilantro for garnish
Olive oil for cooking (approximately 2 tablespoons or 30ml)
Instructions:
In a tagine or large skillet, heat the olive oil over medium heat.
Add the chopped onion and minced garlic. Cook until softened.
Add the ground beef or lamb to the skillet. Cook until browned.
Stir in the diced tomatoes, diced red bell pepper, ground cumin, paprika, ground cinnamon, salt, and pepper. Cook for 10-15 minutes until the vegetables are tender and the flavors are blended.
Using a spoon, make 4 wells in the mixture.
Crack an egg into each well.
Cover and cook until the eggs are set to your liking, about 5-7 minutes.
Garnish with fresh cilantro before serving.
